最近工作有所變動,朋友增我王維的『送別』: 「下馬飲君酒,問君何所知。君言不得意,歸臥南山陲。但去莫復問,白雲無盡時。」 詩意表達,盡在不言中。 但我沒有歸臥南山陲,反而乘此機會,值秋高氣爽之際,歐遊去也。
匈牙利是一個多民族的國家 ,經歷蒙古、土耳其奧斯曼的入侵、奧匈帝國的成立、第一次及第二次世界大戰,才形成了今天的匈牙利。 作為匈牙利的首都,布達佩斯原來在十七世紀前是兩座城市,分別是布達和佩斯;兩個城市中間相隔一條多瑙河,在1872年才正式合併。
遠在四世紀的時候,匈牙利是羅馬帝國的一個行政省。 羅馬帝國沒落後,很多游牧民族從東部遷徙過來;而首先到來的,是被中國漢朝打敗的匈奴。 當匈奴人到達時,他們選擇了在布達定居。 因為布達在多瑙河的左岸,山林甚多,他們在此依山建築了很多堡壘,有利於防守之餘, 亦可享用多瑙河豐富的資源。 佩斯在河的右岸,是一片平原,有利於城市建設,卻不宜防守。 中國人有依山吃山,近水吃水之說,看來任何民族都不會例外。
布達佩斯的夜景美,黃昏更美。 在夕陽的餘輝下,呷着匈牙利紅酒,抽着雪茄,沉醉於落日的變化,世間享受,莫若如此。 作為一個旅遊城市,吃在布達佩斯是有很多選擇的;從地道的匈牙利菜,到精美的法國、意大利菜都有。 可是中國菜卻好像不大流行,遊玩了數天,只見到一家外貌不揚的中國餐館。 最難忘的,是在一家法國餐廳吃的晚餐。
頭盤是蘆筍湯,配菜是蘑菇。 蘆筍清新,隨碟的蘑菇則味道濃郁,是在香港吃不到的。 第二道菜是老虎蝦韃靼,伴碟的是甚麽都已經記不清楚,因為這道菜不光是我第一次品嚐,味道亦非常鮮美,而且入口爽脆;較之日式鮮蝦魚生,又有着不同的風味及口感,使我回味於蝦的回甘之中,忘然其他的配菜了。 接下來的匈牙利鵝肝和羊架都很有水準。 原來鵝肝是匈牙利的美食之一,味道絕對不比法國的差;如果不是還要繼續餘下的行程,必定會買回家細細品嚐。
布達佩斯最大的市場,地方夠大之餘,又不失整潔。 原來匈牙利人都喜歡吃雞的內臟,諸如雞心、雞肝及雞胗,隨處可見。 更甚的是豬膏也大量供應,看來匈牙利人的飲食習慣,與中國人有幾分相似。 離開布達佩斯前,喝了一道匈牙利魚湯。 湯有著濃厚的鮮魚味道,而裡面的魚塊,仍然嫩滑非常;不像在香港,魚塊大都已經煮至乏味、過火,一點都不好吃。 不過,也並非每道匈牙利菜都好吃。 曾經試過某餐廳的鹿肉,過火之餘,更味同嚼蠟,最後只好放棄。
